How Do Confectionery Guitars
Work?

Confectionery Guitars
are a professional cutting tool that provides
quick and uniform cuts of a variety of
confectionery products. Artisan Chocolatiers
most commonly use Confectionery Guitars to
quickly cut uniform pieces of ganache but also
use for a variety of confectionery products
including jellies, marzipan, almond paste, caramel,
and so on. Confectionery Guitars are also
referred to as chocolate Guitars, chocolate
cutters, and Praline cutters.
A high
quality confectionery Guitar cutter consists of a well
manufactured aluminum base for weight
efficiency and a variety of food grade stainless steel wire frames in various widths,
which are most durable.
Food products are simply transferred to the Guitar
cutter using a 'pick up pan.' Once on the Guitar, the
frame of choice, which is attached to the
base, is lowered onto the base, cutting
through product. With only a few movements,
multiple uniform cuts are achieved.
Double frames
provide complete bi-directional cuts, whereas
single frames cut only one direction at a
time. With a single frame, cut strips or use a
pick up pan to turn the food product and make
additional cuts for square or
rectangular shapes.
Confectionery guitars
have standard base intervals
of 7.5 mm but can also be ordered in 5 mm intervals, which is
less common. For example, in the 7.5 mm
intervals, cuts would be at 15mm, 22.5 mm, 30
mm, and 37.5 mm.
