Type of Chocolate Required

The lower the viscosity of your chocolate, the better it will work with your chocolate fountain. The most preferred chocolate for chocolachocolatete fountains will contain a high cocoa butter content and lend itself to a delicious flavor and a smooth texture and result in a beautiful flow over your chocolate fountain tiers. Couverture chocolate is often desired in commercial chocolate fountains due to the high content of cocoa and cocoa butter and a lower viscosity. However, other chocolate can be used but may require thinning. Understanding the 3 primary types of chocolate noted below will help you make your chocolate selection and/or understand what you will be receiving if you rent a chocolate fountain:

  • Couverture

  • Compound

  • Compound Coating

Couverture chocolate is considered 'fine chocolate' and will contain at least 32% cocoa. It will get firm on your chocolate dipped items. Compound chocolate is typically in chip form, made specifically for baking where you want the chip to hold its chocolateshape. This form of chocolate will not quickly harden on food items and will require a lot of thinning with cocoa butter or a clear odorless oil, for proper chocolate fountain use and tier coverage. Compound coating chocolate, often referred to as coating chocolate, has a lower viscosity like Couverture chocolate but unlike Couverture chocolate is oil based, so is a less costly option. Flavor may be an issue but there are many coatings that have a delicious taste. Coating chocolate is also used to dip strawberries and other foods because it hardens when cooled and does not require tempering.
