How to Select Chocolate For Your Chocolate
Fountain
Properly selecting chocolate for your
chocolate fountains will increase its 'wow' factor and impress
your guests looking for that 'wow' factor. Whether you are using a commercial chocolate fountain or
a household chocolate fountain, selecting chocolate that
melts
easily and tastes delicious does not have to be
difficult.
To do this easily, order your
chocolate from an experienced chocolate fountain provider who is
knowledgeable of all of the various types of chocolate and its uses.
Or, you can experiment by trying several types
of chocolate, to determine its melting
characteristics, desired flavor, and various price points.
Chocolate pricing has a very large range. The
most expensive is not always the best choice
for your particular palatte or application. However, the
general rule of thumb is that higher priced
chocolate is a higher grade of chocolate. Premium
or couverture chocolate is cocoa butter based, not oil
based. It will have a smoother and creamier
texture and mouth feel.
In most commercial chocolate
fountains, any type of chocolate can be used. It is a matter of
chocolate consistency and motor capability. Check with the
manufacturer of your chocolate fountain for chocolate melting
instruction s and use. Most manufacturers suggest a high
grade couverture chocolate but compound chocolate and compound
coatings will also work with thinning.
If thinning is necessary, add cocoa butter or a clear odorless
oil like vegetable oid or Canola oil, to
your chocolate chips or other chocolate that is not liquid
enough, and thoroughly incorporating it into your
melted chocolate.
