chocolate consistency and motor capability. Check with the
manufacturer of your chocolate fountain for chocolate melting
instructions and use. Most manufacturers suggest a high
grade couverture chocolate but compound chocolate and compound
coating chocolate will also work but thinning may be required.
Chocolate thinning can be accomplished by adding cocoa butter to
your chocolate chips or other chocolate that is not liquid
enough, or by using
a fresh, odorless oil and thoroughly incorporating into your
melted chocolate.
