machines are used to produce chocolate confections to maintain a

Some tempering machines use a water
bath tempering system because
of its gentle and even heating abilities. Some use a dry
chocolate tempering system, and some provide both. All models
allow for some type of temperature control, manual or automatic.
Many prefer a manual thermostat system to manually regulate
the temperature, yielding greater control over the tempering
procedure.
