What type of chocolate will work with my
chocolate fountain?
A. Generally speaking, any chocolate will work BUT...the secret lies in the product's cocoa content and viscosity. Premium grades of chocolate naturally have more cocoa butter due to the higher content of cocoa but the viscosity of the product, which is
generally proprietary information to the chocolate manufacturer, is the other factor. Of the various types of chocolate,
real chocolate, formally named couverture chocolate, is known for having a smoother texture and more decadent taste sensation and will harden on your food items when cooled. Compound coatings will also harden on your food items but contain less cocoa or none at all. Some of these have an excellent taste, others do not. Compound chocolate contains cocoa but will not readily harden on your food items. As far as flavor goes, some are delicious and some are so-so. Plus, when purchasing chocolate for a chocolate fountain, it's important to understand the importance of chocolate viscosity. Chocolate sold for chocolate fountains that is advertised as "no oil needed" generally has already been thinned down. These can take on an unwanted oily taste so inquire first or purchase in a small quantity to test. We stock a variety of chocolate with various types and price points.
