What Chocolate will
Work
with my
Chocolate Fountain?
Generally speaking, any chocolate will work,
but the secret lies in the product's cocoa content and viscosity. Premium grades of chocolate naturally have more cocoa butter due to the higher content of cocoa but the viscosity of the pro duct, which is
generally proprietary information to the chocolate manufacturer, is the other
important factor.
Of the various types of chocolate,
fine chocolate, referred to as Couverture chocolate, is known for having a smoother texture and more decadent taste sensation
over chocolate coatings, and will firm up on
items dipped into a chocolate fountain. Compound coatings will
also harden on your food items after dipping but contain less cocoa
and are oil based. Some of these have an excellent taste, others do not.
Compound chocolate is a
real chocolate, made with cocoa and cocoa
butter and other quality ingredients. However,
for chocolate fountain use, this is the most
difficult of all, as it requires liberal
thinning. Plus, this type of chocolate will
never firm up or harden on items dipped into
the fountain. However, as far as flavor goes,
some are delicious and some are so-so.
When purchasing chocolate for a chocolate fountain, it's important to understand the
types of chocolate and the importance of chocolate viscosity. Chocolate sold
specifically for chocolate fountains and advertised as "no oil needed"
may because it is a high quality cocoa butter
based product OR may be because it is a lower
grade, oil based product. Of course, the oil
based chocolate or chocolate fondue should be
less expensive, and may have an oily taste.
So, let your taste buds direct you in your
selection of chocolate for your chocolate
fountain, knowing that some thinning may be
required.
